Soup au Pistou

Ingredients
4 cups Vegetable Stock1/2 cup Carrots, finely sliced1/2 cup Celery, finely sliced1 clove Garlic, crushed1/4 cup Onion, finely sliced1 Bay Leaf1/2 cup Zucchini, finely sliced12 Green Beans, finely sliced1/2 cup Tomato, seeds removed and diced1/2 cup Kidney Beans, rinsed and drained1/2 cup Mushrooms, finely sliced1/2 cup Orzo, uncookedSalt and Pepper to taste8 leaves Fresh Basil, finely chopped
Directions
In a medium-sized pot, add vegetable stock, carrots, celery, garlic, onion, and bay leaf. Simmer and cook for three minutes. Add zucchini, green beans, tomato, kidney beans, mushrooms, and orzo. Cook another five minutes until orzo is tender. Remove bay leaf and season. Divide among four bowls and top with fresh basil.
