Butternut Squash Soup

Ingredients
2-3 lb. butternut squash peeled and cubed2 Tbsp. butter1 medium onion, chopped6 cups vegetable/chicken brothGarnishes: nutmeg, pepper, sriacha sauce
Directions
Melt butter in large pan, add onion and cook until translucent, stirring frequently, about 8 minutes
Add squash and broth, bring to simmer
Simmer 15-20, until squash is tender.
Carefully puree squash with broth in blender in batches until smooth
Return soup to pan and keep warm to serve!
