Butternut Squash, Yam and Apple Soup

1 medium onion - chopped1 tbsp olive oil2 cups vegetable stock (broth)2 cups butternut squash, peeled & diced2 cups Yams or Sweet potatoes, peeled & diced2-3 medium apples, cored & diced1/2 tsp salt1/2 tsp pepper1/2 tsp nutmeg1/4 tsp cayenne pepper
In a large soup pot, saute' the onions in oil on medium-high heat until translucent. Add the stock, squash, yam, apples and salt, pepper, nutmeg and cayenne and bring to a boil. Turn down heat and simmer for 30 minutes. Take 2 ladels' worth of vegetables and 1 ladel of stock and blend in blender or food processor (hand stick mixture works the best) until smooth. Return to soup pot and stir together before serving. Makes 5 servings.
