Low Fat Chicken Curry

Ingredients
8 boneless skinless chicken breast1/2 c. flour2 TBSP olive oil2 medium onions, chopped2 medium bell peppers, chopped1 clove garlic, minced2 tsp. curry powder1/2 tsp pepper2 cans diced tomatoes1 tsp chopped parsley1/2 tsp thyme2 TBSP raisins1 cup water
Directions
1. Dust chicken with flour.
2. Brown in olive oil.
3. Add curry powder, black pepper, mix well.
4. Add remaining ingredients except for raisins.
5. Cook covered on top of stove or in oven until
done. About 45 minutes.
6. Add raisins.
7. Serve over rice.

    spicy but the raisins add a very nice sweetness. I didn't have tomatoes so it was more yellow curry. I would add more raisins next time. - 2/3/10
