Ingredients
1 cup dry, hulled wheat berries4 cups water1 cup sliced almonds1 cup dried mixed fruit (cranberries, golden & seedless dark raisins, strawberries, cherries, currants, etc.)...or any dried fruit of your choice1/4 cup (or more) chopped fresh mint leaves1 tsp ground cinnamonTopping:7 full sheets of graham cracker (or 1 cup crumbs)3/4 cup powdered sugar 1/3 cup (or less) sliced almonds
Directions
Rinse and drain wheat berries. Boil them covered for an hour in 4 cups water as you would cook rice. Do not allow berries to burst by overcooking. After cooked, drain in a colander. Dunk colander into a big bowl of ice water to cool the berries and stop the cooking process. Drain again, and allow berries to drain overnight (or for a few hours) in the frig.
Chop almond slices, fruit and mint into small pieces. (If using only evenly sized fruit such as raisins, you don't have to chop the fruit.) Mix nuts, fruit, mint, and cinnamon evenly into drained wheat berries. Place in serving dish and pat down.
Using a food processor or mortar & pestle, grind graham cracker sheets into fine crumbs. Evenly coat the top of the Koliva with the graham cracker crumbs and pat down with large spoon or bottom of measuring cup. This layer will trap any moisture, so don't skip it! Next sift or evenly sprinkle powdered sugar to completely coat the top of the dessert. You can pat this second layer down as well to make it smooth. Finally, using the additional sliced almonds, make a cross (or other designs) on the top of the dessert.

This recipe makes about 12 half cup servings.
