NYC Pink's Vegan Pumpkin Waffles

3/4 C. AP flour1/2 C. whole wheat flour1/4 C. not packed brown sugar1-1/4 tsp baking powder1/4 tsp baking soda1/4 tsp salt3/4 tsp cinnamon1/4 tsp ground gingerCouple shakes of nutmegA shake of ground cloves3Tbs. applesauce1 C plain light soymilk1 C canned pumpkin (puree, not pie mix)1 Tbs canola oil1 tsp vanilla
Mix the dry ingredients together. In a separate bowl, vigorously whisk together the wet ingredients until emulsified. (I actually do this right in a 2 C measuring cup.) Pour the wet into the dry and combine. Let the mixture sit for about 10 minutes while your waffle iron heats up.
This makes 4 large waffles in my Cuisinart waffle maker (plain, not Belgium), using 1/3 C of mxiture instead of the normal 1/2 C to make them stretch out to 6 servings. To serve, top with 1 Tbs of applesauce, a sprinkle of cinnamon and a small drizzle of maple or pancake syrup. A small sprinkling of chopped nuts isn't bad either.
