Breakfast Muffins

Ingredients
1 cup Oatmeal3/4 cup cut up dates2 cups boiling water1/2 cup margerine or butter1 cup brown sugar1/4 tsp salt1 cup flour1 tsp baking soda1 egg1/2 cup of coconut1/2 tsp cinnamon
Directions
Pour 2 cups of boiling water over the oatmeal and dates.
Let cool.

Mix the rest of the ingredients together.....add to date mixture.

I should tell you now I always seem to have to add more water at the end.....the mixture seems too dry to me.

Pour into muffin tins.
Bake at 375 for approx. 20 minutes.
Makes about 15 muffins
