Crispy Baked Chicken Breasts

Ingredients
4 Chicken Breasts (mine are usually between 6-8oz each)1 Large Egg (scrambled in a bowl big enough to fit the chicken breasts one at a time)1 C Italian Bread Crumbs (this usually gives me extra crumbs, but its better than not enough)9x13 baking pan (lightly greased or covered with foil)
Directions
1. Preheat the oven to 450 degrees.
2. Trim the fat off of each chicken breast.
3. Line up the plate of chicken breasts, the egg and the bread crumbs like a little assembly line (in that order). I ususally like to use a piece of foil or a paper plate for the bread crumbs.
4. Bread each chicken breast by first dipping it in the egg and then in the bread crumbs. If you use two seperate forks it keeps you from getting your hands (or the breadcrumbs) too messy. Place the chicken in the 9x13 baking pan.
5. Bake for 45 min or until the thickest part of the biggest breast is no longer pink. Makes 4 servings.
***If you are serving more people, you can cut each breast in half (filet) and cut the cooking time down to 30 minutes... may need more than 1 C of breadcrumbs***
