Patak's Chicken Red Curry

1 tsp ghee (clarified butter)2 large chicken breasts (or 3 small), cubed1 tsp ginger powder1 tsp garlic powder1 large (1/2 small) onion, diced1 green pepper, diced1 can petite diced tomatoes2 Tbl Patak's Red Curry Paste, Hot1 Tbl Patak's Red Curry Paste, Mild
Melt ghee in a large skillet. Season chicken with garlic, ginger, salt and pepper, and add to the skillet. Saute chicken until browned. Add onions and peppers and continue cooking till vegatables are soft and chicken is no longer pink. Add in diced tomatoes and curry paste. Let simmer about 15-20 minutes to let the flavors meld.
