Ingredients

    3 Tbsp Green Curry Paste
    1 Can Lite Coconut Milk
    8 oz Chicken Breast
    1 Green Bell Pepper
    1 Zucchini
    1 Onion
    1 Cup of Frozen Peas
    1 Tbsp Olive Oil

Directions

Saute Chopped up veggies & Cut up Chicken (bitesized) in olive oil. Add coconut milk & Curry Paste, simmer on medium for 10 minutes. Remove from flame.

Serve with brown rice (not included in nutritionals!)

    Very Good
    Loved the recipe. I added basil to the flavor and it made the sauce perfect!
    I doubled the recipe for left overs and for everyone to have some.

    Incredible!
    I added whatever veggies I had in fridge - broccoli, carrots, snap peas. I had Green Curry paste from the Asian Market and the 3T were a little to spicy for our (asbestos mouth) palates. - 2/17/12
