Introduction

My husband's favourite Chicken Curry, very simple to make! My husband's favourite Chicken Curry, very simple to make!
Number of Servings: 2

Ingredients

    2 Chicken Breast halves, boneless, skinless - cubed
    1 large onion, thinly sliced
    2 plum tomatoes, diced
    1 tsp ginger, minced
    1 tsp garlic, minced
    1 tsp tomato paste
    1/2 tsp salt
    2 tsp curry powder
    1 tsp canola oil
    3/4 cup evaporated milk

Directions

1. In a medium skillet over medium heat, cook onions in oil until browned. Add ginger & garlic and cook 1 minute.
2. Add curry powder and cook for 1 minute. Add tomatoes and cook until reduced and well combined, approx 5-7 minutes.
3. Add chicken, tomato paste and salt and cook until chicken is no longer pink.
4. Add evaporated milk, stir, and simmer until chicken is cooked through.

Serve over rice or enjoy with fresh naan.

    I loved this recipe - it was very very quick and easy to make. I did add more spices the second time I made it though, because it was not as spicy as I usually anticipate curry to be. - 3/16/08

    I use something similar but without the tomatoes and tomato paste. I add a lot more curry, usually about 2 tbls. I serve it with brown rice and usually broccoli. It is delicious. - 1/20/10
