4 Medium Tomatoes, thinly sliced4 Medium Zucchini, thinly sliced2 Bell Peppers, red yellow or green, thinly sliced4 Medium Onions, thinly sliced2 Medium Egg Plants, thinly sliced6 Tablespoons Pesto Sauce1 Package fresh Mushrooms, thinly slicedSeveral Cloves of Garlic, minced1 Cup, chopped fresh parsleyOlive OilFresh Ground Black PepperFresh Romano or Parmesian, GratedNow like the word THIN...
Directions
Preheat oven to 400 degrees
Arrange sliced vegetables in two baking pans
In a bowl mix the Pesto, Garlic, Olive Oil and Pepper
Brush Mixture over Vegetables
Sprinkle with Parsley
Bake 35 minutes
then BROIL to char slightly
Serve emdiately over whole wheat pasta (angel hair)...
