Number of Servings: 1

Ingredients

    1 cup spinach
    1 cup broccoli, chopped
    1/2 cup grape or cherry tomatoes, sliced
    1/2 cup cottage cheese, 4% milkfat, large curd
    1/2 cup pasta sauce

Directions

Spray a pan with low-calorie cooking spray and heat on the stove.
Cook broccoli, spinach and tomatoes, adding small amounts of water to create steam as needed.
Once broccoli is softened, add pasta sauce and cottage cheese. Stir until cottage cheese is starting to melt. Serve!
You can change up the vegetables, add onions and mushrooms, or use spices to vary this recipe.

    I like how you get the flavors of lasagna without the pasta. I am trying to keep my carbs down, and this gives me a great alternative to other items I eat all the time. - 1/21/12

    DELICIOUS! This is a great recipe, I added garlic, mushrooms, roma tomatoes, and ground turkey. I also only used 1/2 the cottage cheese (2%) and it was still creamy and delicious! :) - 6/27/11

    I don't know why giving a helpful comment makes someone think it is wailing and moaning and making the submitter feel like crap. The purpose of a support site is to help each other if you can't support a person's helpful comments WITHOUT BEING NEGATIVE it would be nicer to not make a comment at all - 1/24/09
