Single Serve Thai Hot & Sour Soup with Prawns (Tom Yum Goong)

Ingredients
3 cups of bottled water1 Red Chilli, slicedJuice of 1 small lime1 tbsp Fish Sauce6 shelled and de-veined king prawns with tails intact1 stalk of lemongrass3 kafir lime leaves90gms of dried soba noodles (buckwheat noodles)1 small yellow squash, cut into chunks.5 cup of fresh green beans, snow peas, baby spinichFresh coriander (cilantro)1 tsp Thai Chilli Paste or 1 tbsp Tom Yum Paste (to taste)
Directions
Bruise Lemon Grass and place in water in pot and boil for 5 mins.
Add washed kaffir lime leaves.
Add selection of fresh vegetables and noodles
Once noodles are near cooked, add prawns and turn off heat.

Whilst pot is resting, add fish sauce, lemon juice and chilli into serving bowl.

Remove lemongrass and kaffir leaves from pot and pour contents into serving bowl. Add chilli paste and mix through. Taste and add lime juice, fish sauce, or chilli paste to tatse. Top with fresh coriander to serve.

    This seemed too good to be true, so I looked at the full nutritional breakdown for this recipe. There is an error. The calorie count for the soba noodles (89 calories) is probably for 90 grams COOKED. To get 89 calories worth of cooked noodles, you'd want to start with about 1oz/28gr dried. - 1/22/13
