5 tblsp cocoa3 eggs1 c. white sugar1/2 c. Splenda1/3 c. vegetable oil2/3 c. applesauce(sweetend or unsweetened)2 c. grated zucchini1 tsp vanilla extract2 c. flour1 1/2 tsp baking soda1 tsp salt1 tsp ground cinnamon3/4 c. semisweet chocolate chips
Preheat oven to 350. Lightly grease 4 mini loaf pans or 2 9x5 pans. In a large bowl, combine eggs, sugar, oil, applesauce, zucchini, vanilla & cocoa powder. Stir in the flour, banking soda, salt & cinnamon. Fold in the chocolate chips. Bake for 40 min in mini loaf pans & 45-50 min for 9x5 pans.
