1 Tbls olive oil1 small red onion1 tsp minced garlic1 tsp curry powder4 large eggs1 Tbls Nutritional Yeast1/4 cup soymilk3 cups spinach1 can garbanzo beans, drained and rinsed
Saute sliced onion in olive oil over medium heat. Add curry powder and garlic. Saute until fragrant. Stir in chickpeas. Cook until they start to pop. Pour beaten eggs (with soymilk and nutritional yeast) over the beans. Stir occasionally until eggs cooked through. Stir in spinach until just wilted.
