Blueberry Pancakes

Ingredients
1 cup baking mix2 egg whites1 cup fresh or frozen blueberries3/4 cup milk1 tbsp canola oil (if using low or no-fat milk)1 packet sweet n low, truvia, or splenda
Directions
In a large measuring cup, add all ingredients and mix until combined. Do not over mix.

To a griddle sprayed with cooking spray, add 1/4 mixture. When air holes appear around edges, check underside to make sure pancake is browned. If so, flip with spatula and cook other side until browned. Serve immediately.
