Indian Beef Curry

Ingredients
1/2 lb beef tenderloin, cubed2 cups cauliflower florets1/2 large red pepper, cubed2 garlic cloves, minced1/2 Tbsp curry powder1/2 Tbsp fish sauce3 1/2 oz nonfat Greek yogurt1/2 cup fresh basil, choppedsalt and pepper to taste
Directions
Heast large skillet over hight heat and spray with Pam. Add meat and cook until golden brown on outside and medium rare. Remove to platter and keep warm.

Spray pan again and add cauliflower, pepper cubes and garlic. Cover pan and saute till crisp-tender about 7 minutes. Add curry and stir; remove pan from heat and add fish sauce. Stir in yogurt and basil. Return the meat to the pan. Season with salt and pepper and serve immediately.
