french onion & potato soup

* *(V) Onion, raw, 5.3 oz (remove) * *Raw White Onion (Serving = 1 medium Onion), 1 serving (remove) * *Carrot - raw, chopped, 1 cup (remove) * Salt, 1 tbsp (remove) * Water, tap, 10 cup (8 fl oz) (remove) * *Potato, raw, 1 large (3" to 4-1/4" dia.) (remove) * *jarlsburg swiss cheese, 5 serving (remove) * *French stick, 85 gram(s) (remove)
saute onions in tsp oil until soft/transparent, add diced raw potato with skin on and saute another 5 minutes. Add tsp of salt and pepper to taste. Add 4 cups soup broth and simmer for 20 minutes. Puree soup and pour into bowls. Optional: add crouton and cheese and bake until melted. Serves 4.
