Vegan Whole Grain Cornbread

Ingredients
1 cup whole wheat flour1 cup yellow cornmeal4 tsp baking powder1/2 tsp salt1 Tbsp ground flaxseed plus 3 Tbsp water1 1/3 cups unsweetened soymilk1/4 cup canola oil
Directions
Mix dry ingredients in a medium mixing bowl. In a smaller bowl whisk together flaxseed and water. Add milk and oil to flaxseed mixture and whisk well. Add wet ingredients to dry and stir to combine, just until moistened. Batter will not be smooth. Spoon into a greased (with canola cooking spray) 12-cup muffin tin and bake at 450 degrees for about 20 minutes or until golden brown.
