Chicken, Mushrooms & Snap Peas

1 tbsp olive oil1 chicken breast cubed1 1/4 cup snap peas8 large mushrooms1 tsp salt1 tsp pepper1 tbsp garlic powder1 box Zatarain's Long Grain & Wild Rice
Cut chicken in cubes.
Put oil in medium skillet and heat. Add chicken and spices and saute until almost done. While chicken is cooking slice each mushroom into large slices (I did four slices per mushroom). Add mushrooms and peas to pan cover and simmer for approx 6 minutes.
Prepare rice according to directions on box. Divide evenly into 4 portions (approx 3/4 cup each). Divide meat and veggie mix into 4 portions and serve on top of rice.
