Kielbasa & Kidney Bean Soup

Ingredients
Turkey Kielbasa 1/2 lb (or 1 package)Extra Virgin Olive Oil, 3 tablespoonsOnion, 1Carrots, 2Celery Stalk, 2Chicken Broth, 8 cubesKidney Beans, 2 cansSeasonings to taste (pepper/salt/pepper flakes, etc)Frozen Chopped Spinach, 2 package (10 oz), thawed, & squeezed dry
Directions
Saute kielbasa about 3 minutes, add all other ingredients except spinach bring to a boil, simmer for about 10 minutes, add spinach for an additional 2 minutes.

Makes 12 (1-1/2 cup) servings.
