Quick Lemony Chicken Rice Soup (Avgolemono)

6 c. Chicken Broth, fat free, reduced sodium3/4 c. onion, chopped3.4 c. carrots, chopped3/4 c. celery, chopped1/2 c. long grain rice, uncooked (not instant)10 oz. can cooked white meat chicken, 97% fat-free, coarsely cut1/4 c. lemon juice, fresh squeezed about 1 lemon1/2 c. egg substitute
Bring broth, onions, carrots, celery, rice, and chicken to a boil, then cook over medium heat for about 15 minutes, until rice is cooked. Mix lemon juice and eggs until well beaten then stream slowly into the soup. Cook for an additional 3 minutes over medium heat, then serve.
Makes 6 cups of soup
For a creamier soup, use 2 regular eggs instead of egg beaters. This will add about 20 calories/cup.
