Country Style Chicken Stew Provencal

Ingredients
2 tsp olive oil1 lb boneless skinless chicken breast, 1 inch pieces4 oz portobello mushrooms, sliced or cubed1 can (15 o) chicken broth fat free1/4 cup dry white wine3 sweet potatoes, sliced1 can (15 oz) great northern beans, drainedand rinsed4 carrots sliced8 cloves garlic, minced1/4 tsp white pepper1 tsp herbes de provence1/4 cup snipped fresh parsley2 whole parsnips, peeled and cut into large pieces
Directions
Heat olive oil in large nonstick skillet over medium-high heat. Add chicken and mushrooms. Saute, stirring occassionally until chicken is lightly browned about 8 minutes.

Combine chicken mixture, broth, wine, potatoes, carrots. garlic, parsnips and white pepper in a slow cooker. Cover and cook on low for 6-7 hours.

Mix in the herbes de provence and serve garnished with parsley
