Sir Paul McCartney's Ob-La-Di Enchiladas

For the sauce:1 C tomato sauce1 C water1 large onion, chopped1/2 tsp cumin1/2 tsp oregano2 Tbsp cornstarch dissolved in 4 Tbsp waterFor the filling:14 oz package firm tofu, drained and mashed1 onion, chopped1/2 tsp chili powder1/4 tsp cumin1/4 tsp garlic powder OR 1 tsp minced fresh garlic1 1/3 picante sauce3 C spinach, steamed12 tortillas
Preheat oven to 350 degrees F.
Place all sauce ingredients, except cornstarch, in a small pan. Cover and cook over low heat for 20 minutes. Stir in the cornstarch mixture, and cook until sauce thickens.
Prepare the filling: Mix the tofu, onion, spices, and picante sauce.
Put some of the spinach in the middle of each tortilla; then add 3 - 4 heaping teaspoons of the tofu mixture. Roll tortilla. Lay seam side down in a baking dish. Repeat until all 12 tortillas have been filled and rolled.
Top with vegan sour cream or cheese if desired (not included in nutrition calculations). Cover with sauce. Bake 20 - 25 minutes.
