Introduction

Great salad or chunky salsa. Great salad or chunky salsa.
Number of Servings: 12

Ingredients

    1 avocado, diced
    2 cups of corn
    2 cups of cherry tomatoes, quartered
    1/4 cup red onion, diced
    1 T. olive oil
    Juice of half a lemon
    1 T. salt
    1 T. pepper
    1 T. chili pepper or cayenne pepper


Directions

Prepare and combine all vegetables in a salad bowl.
In a small bowl combine spices and lemon juice. Whisk in olive oil.
Pour over and toss into salad.
Chill or serve immediately.
Makes 12 1/2 cup servings.

    I second adding edamame to this recipe, it doubles the protein and but doesn't compromise the taste at all. I'd recommend going really light on the onions, they really overwhelm the other flavours. - 4/19/09

    This was a great recipe. (I don't like onions, so I left them out.) I ate it as a side dish to a chicken breast. It was easy to make and I put the rest in the fridge for another meal. - 9/18/09

    I thought this was excellent. Although it would have been wonderful exactly as submitted, I added a little feta cheese and some edamanne as a personal touch and increased the health benefits even more :) So easy! - 9/23/07
