Spinach Mushroom Omelet

2 egg whites1 egg1 c. fresh spinach1 c. fresh mushrooms
Saute mushrooms in water, add spinach for a minute or so until wilted. Whisk together egg and egg whites. Pour egg mixture into skillet, then add veggies on one half. When cooked nearly through, fold empty half over vegetables. Let cook until done.
