Beef Stew (Soup)

1 lb. lean stew meat1 beef bullion cube or 1 cup beef broth1 medium onion, cut in large chunks1 small stalk of celery, sliced 1/8"-1/4"1/2 head cabbage, cut in large chunks1 medium russet potato, cut in large chunks6 cups water1 whole bay leaf (will be removed later)2 whole black peppercornsdash of oregano, rosemarysalt to taste, kosher cooks best
Put meat in water with beef broth (or bullion cube). Bring to a boil. Reduce heat to med-high, add onion, celery, peppercorn, salt, bay leaf, oregano and rosemary. Reduce heat to medium, keep at a low boil for 30-40 minutes. Add cabbage and potato and keep at low boil for 15-20 minutes. Reduce heat to low until ready to serve.
