Mushroom Risotto

Ingredients
* Mushrooms, fresh, 2 cup, pieces or slices * Butter, salted, 2 pat (1" sq, 1/3" high) * *Arborio Rice (Dry), 1 cup * Chicken stock, home-prepared, 4 cup * Onions, raw, 0.5 cup, chopped * Parmesan Cheese, grated, 1 cup * Pinch of saffrom * Parsley
Directions
saute onion in 1 pat of butter then add mushrooms saute until soft. Add rice stir until coated in onion mushroom and butter. Add wine add a ladleful of stock stir until absorbed. Crumble some strands of saffron. Keep stirring adding stock until rice is cooked. Add parsley and parmesan at the end of cooking stir and serve.
