Lemon-Dill Chicken Pilaf w/Quinoa

Ingredients
2 chicken breast halves, cubed1-1/2 c. quinoa, dry2 portobella mushroom caps, chopped2 medium onions, chopped1 green bell pepper, chopped2 T. dried dill weed1 lemon, zest & pulp1-1/2 t. lemon pepper
Directions
1. Zest 1 small-medium lemon, then quarter lemon, set zest and lemon aside.

2. Rinse quinoa before cooking and cook according to package directions.

3. Sautee onion, bell pepper, portobello mushroom in pan until transluscent. Add chicken and lemon zest and cook until chicken is no longer pink.

4. Mix quinoa and chicken/veggie mixture together in pan, Add lemon zest and lemon pepper and sautee for a while longer to warm through.

Makes 8 1-cup servings.
