French macarons

egg white, fresh, 2 largePinch of cream of tartarGranulated Sugar, .5 cupGround almond, 3 oz
Whip egg whites until bubbly with pinch of cream of tartar. Add sugar in 3 batches. Whip until stiff peaks form. Gently fold in almond meal, in 3 batches. Pipe into 1.5" circles on parchment paper, leaving 2" between circles. Let rest 45 minutes. Garnish with coarsely ground nuts late into the resting process, if desired. Preheat oven to 325o.
Bake for 10 minutes in 325oF oven, then 3-5 minutes at 285o. Let cool for a few minutes and remove from parchment. Keeps for several days in an airtight container. Sandwich two using ganache (adds calories).
These are delicious filled with 0% Greek yogurt, but they must be eaten immediately if doing so, as they will quickly become soggy due to the high moisture content of the filling.
