Black Lentil Curry

Ingredients
2 cups black lentils (pre-cooked)1/2 small onion GarlicGinger.5 cup green bell pepper.5 cup chopped tomato 2 small mushrooms1 cup spinachwatersalt, pepper, cumin, masala spice, corriander seed
Directions
The prep time for this recipe is so long because you have to pre-cook your lentils if you are buying them dry. Add 2 cups of black lentils to a large pot with about 6 cups of water and bring to a boil. Stir them and simmer them for about 2 hours, or until they are soft.

Chop onion, garlic, ginger, green pepper, tomato and mushrooms.
Sautee onion, garlic and ginger in a pan until onions are transparent.
Add mushrooms, green pepper, and tomato to the pan and continue to sautee.
Add water (as needed), lentils, spices and spinach to the pan and let it simmer for 20 minutes adding water as needed (you shouldn't need too much).

Serve over brown rice.

Makes two 1 1/2 cup servings.
