Modified Chocolate No-Bake Cookies

3 cups rolled oats1/2 cup cocoa powder2 cups granulated sugar1/2 cup milk (I used 2%)1/4 cup + 2 Tbsp olive oil (I used extra light)1 tsp. vanilla extractPinch of salt
Combine sugar, milk, olive oil, and cocoa powder in pot over medium heat. Boil the mixture for one minute. Remove from heat, add pinch of salt, vanilla, and oats. Stir well. Drop mixture onto waxed paper, and allow to cool for 1 hour.
Makes about 2 dozen no-bake cookies.
