Szechuan Chicken Stir-Fry

Ingredients
1 tsp oil1 skinless chicken breast fillet, dicedPinch dried chilli (optional)1 tsp garlic puree2 spring onions, sliced1.5 tsp soy sauce1 tsp sweet chilli sauce5 cashew nuts
Directions
• Stir-fry the chicken. Heat half the oil in a wok or large frying pan. Add the chicken and stir-fry until browned. Remove, keep warm.
• Add the remaining oil and add the chilli, garlic and spring onions and stir-fry for 3 minutes until seared.
• Return the chicken to the wok along with the soy and chilli sauces, cashews.
• Heat through for 30 seconds. Serve with plain white rice.
