Sonia's Southern Cornbread

Ingredients
1 cup cornmeal (preferably medium grind Hoover's)l/4 cup plain flour1 egg2 Tb. olive oil1 cup low fat buttermilkl tsp. saltl tsp. baking powderl/4 tsp. baking sodal/2 tsp of olive oil for skillet
Directions
Mix dry ingredients; in seperate bowl stir egg, buttermilk, and oil. Add to dry ingredients. Let sit for 5-10 minutes. Heat skillet in oven while preheating to 400 degrees. Put about l/2 tsp. olive oil in skillet. Pour batter into HOT greased skillet and bake for 20 minutes, or until brown.
Makes 8 servings.
