Ma's Chicken Minestrone

3 Slices of turkey bacon2T EVOOMedium Red Onion3 Stalks Celery1 Lg. Carrot2 C. Shredded Lettuce0.25 C fresh basil leaves0.25 C fresh parsley leaves1 tsp. dried rosemary2 cloves minced garlic1 Quart drained, crushed tomatoes (italian style)1 Can white beans1 Can kidney beans2 Qts. Chicken broth4 C. cubed chicken (4 chicken breasts)
Cook EVOO & bacon in the bottom of the pot
add all the veggies, stirring in until the greens begin to melt. cover and cook until the veggies are tender. (i like my veggies a little crunchy so i don't let them get too soft).
add remaining ingredients and simmer for about an hour. you can do longer if you want and it doesn't really alter the flavor.
makes 20 cups
it freezes very well and defrosts easily!
