Quark cheese dumplings

1000g Quark style low fat white cheese (or similar)160g flour2 eggssalt
1) put a pot with salt water on the stove. while you wait for it to boil:
2) if the quark has some extra fluid, discard it. mix all the ingredients until you have an even, thick dumpling dough
3) once the water boils take spoonfuls of dough and put them in the water. if you want them to look smooth and pretty, you can sweep the spoon with the dough against the inside of the bowl, that'll ive you one rounded and one flat edge.
3) let simmer for at least 10 minutes. then dry and serve with compote or fruit or cinnamon and sugar or whatever you have. i'm sure they're also delicious with hearty ingredients.
