1 Tbsp olive oil1 c onion1/2 c mixed bell, red, yellow and/or orange sweet peppers1 Tbsp minced garlic1 tsp cracked black pepper1-1/2 tsp sage2 tomatoes, cubed1 Tbsp cilantro8 oz can Hunts no salt added tomato sauce1/2 tsp salt3 c water1 c dried lentils
Heat olive oil in pan. Cook peppers, garlic and onion until onion is translucent. Add black pepper and sage. Set aside.
In pot, heat lentils and water until boiling. Add onion and pepper mix. Return to boiling. Add cilantro, tomatoes, salt and tomato sauce. Bring down to simmer with lid on for about 10 minutes or until lentils are tender.
Add salt and pepper to taste.
