Kaytlin's Spicy Black Bean and Veggie Soup

Ingredients
-4 cups beef stock (I used kitchen basics, reduced sodium, 1 whole carton)-3 1/2 cups black beans, canned.- 2 tsp extra virgin olive oil- 1 tbsp chopped fresh chives- 1 medium yellow onion, chopped or cut into strips- 2 tsp cumin- 1 tsp red pepper- about 1/8 head of green cabbage, chopped (or i just rip it)- 1 med green bell pepper, chopped.- 1 1/2 tbsp garlic
Directions
-Put olive oil, onion, and garlic into bottom of Pot and sautee just until garlic begins to brown a little and onion gets soft.
-Pour in all of the beef stock
-Add all ingredients and stir well
- When the soup reaches just a boil, turn on low and simmer, covered, for about 20-30 minutes or until desired tenderness/taste
