Breakfast muffin cups with what I had on hand

Ingredients

2 large eggs8 slices pepperoni1/4 cup mexican style four cheese blend1 cup fresh spinach1/4 cup red bell pepper1/4 cup green bell pepper1 cup flour1/4 tsp salt1/4 tsp pepper1/4 tsp lawry's seasoning salt
*Beat 2 large eggs in a mixing bowl
*Add cheese, milk, shredded spinach, chopped red and green bell peppers, 8 slices of pepperoni and salt, pepper and seasoned salt and mix well
*Add flour and mix until it's all wet
*Fill a 24 cup mini muffin tin with mixture
*Bake at 350 degrees for 30 minutes or until browned and done through
Makes 24 mini muffins/Servings figured using one muffin per serving
*I would have used sausage instead of the pepperoni if I'd had any on hand.
