Ingredients

    1 pound lean beef stew meat
    1 can low-fat cream of mushroom soup
    1/2 cup water
    1 packet dry onion soup mix
    8 oz fresh mushrooms (whole or sliced, your preference)

Directions

Brown meat in skillet over med-high heat. You can skip this step to save time and the recipe will still be great. I just think it gives the meat more flavor and helps it hold together better. Place meat in 4 quart crock pot. Place mushrooms on top of beef. Combine soup, water and soup mix and pour over mushrooms and beef. Cook on low for 6-8 hours or high for 3-4 hours.

Tastes great over brown rice or hot cooked noodles (neither are included in calorie count).

    Just made this for dinner tonight, when making it I realized that I didn't have onion soup mix, so I chopped up an onion, threw in some sherry (1/4c.) some worchestershire (few teaspoons) and some beef boullion concentrate. and its turned out excellently! Just had to share! Thanks!!

    I've been making this for years as well. However, most times i throw in all kinds of veggies. Basically, this is my way of getting rid of left over veggies. Celery, onions, carrots, green beans, corn, etc. - 2/4/09

    Fantastic! We added a tablespoon of Worchestershire Sauce and 1/2 cup lowfat/fatfree sour cream (add sour cream just before serving) .... Yummy too !!!!! - 2/20/09
