LOW Calorie Natural Vanilla Ice Cream

Ingredients

1 c of half and half (I use Horizon)6 oz soft tofu (I use Mori-Nu)2 c almond milk (I use Blue Diamond)1/3 c sugar (I use C&E organic - you can use Splenda, but then the ice cream is no longer natural)3/8 t pure stevia powder (or use equivalant sugar, which would be 1/4 c and will alter nutrition content)2 t vanilla extract*
Combine all ingredients in blender and blend until smooth (30 secs - 1 min).
Pour into ice cream maker and freeze. Serve immediately because further freezing causes it to become icy & hard (due to the low fat content). I pour it into 1-serving freezer containers and thaw as needed.
Makes 4 servings.
*Substitute any extract flavor for vanilla - peppermint, coconut, orange...the possibilities are endless!
