Ingredients
1 1/2 cups sliced zucchini1 Cup Summer squash1/2 cup onion1 cup green pepper1 cup red pepper8 oz sliced mushrooms1 tablespoon Extra Virgin Olive Oil3 cloves garlic finely chopped2 tsp Basil1 tsp italian seasoningsalt and pepper to taste.serve with parmesan/romano cheese
Directions
Heat oil in pan with garlic,
Add Onion and peppers cook 5 minutes
Add Squash cook additional 5 minutes covered.
Add Mushrooms, Diced tomatoes and seasoning.
Stir and cover until vegetables are tender.
Serve over pasta or rice.
top with cheese. (optional)
