Strawberry Banana Crepes

Crepe Batter:0.5 cup flour0.5 cup whole wheat flour2 Tbsp butter, melted1 egg0.25 cup egg substitute0.75 cups 1% milk0.5 cups waterFilling:0.25 cups Neufchatel cheese0.25 cups strawberry preserves2 bananas
Put Crepe Batter ingredients in a blender and puree until smooth. Refrigerate at least one hour or overnight (this prevents the crepes from breaking when you cook them.
Meanwhile, combine Neufchatel cheese and preserves until smooth.
Grease a 6-inch frying pan or crepe pan with butter. Add approx 4-6 Tbsp of crepe batter (depending on how thick you want teh crepe - add less for thinner crepes and less cals!)to the pan and fry one minmute or until cooked enough to flip without breaking. Flip and cook until golden. Repeat with remaining crepe batter until all are cooked.
Sppon some strawberry mixture into the center of the crepe. Add a few banana slices and fold the crepe over. Serving size as calculated is 2 crepes made with 4-6 Tablespoons of batter each, 4 servings total.
