Throw all of that in your 1, 1.5 or 2 pound bread machine. I even run this receipt in my Zoji mini 1 pound and it does fine since I don't bake the final loaf in it.Set it for "dough cycle". I always check on it when it's mixing to make sure there's enough water. I usually measure by weight and 350g bread flour to 240g water is usually a good ratio. If you're a King Arthur fan, I substitute 50 g of Hi Maize high fiber flour for 50 grams of the bread flour to get a little more fiber in it. I also throw in 25g oat bran for nice little flecks. This recipe isn't fussy as long as you have enough water. After mixing, the dough should be pretty smooth, but slightly tacky.When it's done, take it out, divide into 8 pieces by weight. Shape little balls, then flatten them a bit. I make 8 ballsrounds on a cookie sheet and they have just enough room. Let them do their final rise for about 30-45 minutes. *Tip* For a good rise (even in a cold New England house!) I put the kettle on while shaping the rolls. By the time I'm done, the water's boiling. I pour the water in a pyrex dish and put on the bottom shelf of the oven. Put the bread on the top shelf and it's rises beautifully in about 40 minutes.
