Ingredients
8 good size potatoes (peeled and rinsed, cut into 1" cubes)1 tsp dill weed (dried)4 tsp minced garlic1 tsp curry powder.5 tsp onion powderpinch of salt1 tbsp becel light margerine1 tbsp extra virgin olive oil
Directions
peel, rinse, cube, potatoes and put in roasting dish
in a bowl:
melt margerine in microwave
add oil
mix in all other ingredients
pour mixture over potatoes and mix in covering potatoes

When it comes to the cooking of them, I change the time and temperature cooked at every single time. It all depends how much time I have. They are the best if slow roasted if you like them crunchie. Today I am cooking them at 250F for probably 2-4 hours, just kepp my eye on them and remix once in a while. You can cook the in less the an hour around 375 to 400F. Don't forget to remix once in a while so that crunchiness is even. Enjoy!
