Loaded Baked Potato Soup

Ingredients
-2 baked potatoes, skin removed-1 head of cauliflower, steamed-1 1/2 c. skim milk-1 1/2 c. chicken broth-1/2 c. sour cream-Chives or green onion-Salt and pepper-Shredded cheddar-Bacon bits**Nutrional information does not include cheese or bacon bits
Directions
-Bake potato and steam cauliflower
-Combing baked peeled baked potato, cauliflower, chicken broth and milk.
-Boil for 3-5 minutes.
-Blend until smooth with immersion blender. Stir-in sour cream, chives and salt and pepper. Boil for 10 minutes.
-Serve garnished with cheddar cheese, bacon bits and additional chives or green onion.
