2 1/4 cup oat flour1.5 tblsp ground cinnamon1 tsp baking soda1/2 tsp salt1/2 tsp nutmeg4 large egg whites1 cup Splenda1/2 cup unsweetened applesauce1 cup fat free vanilla yogurt3 cups finely shredded carrotsCream cheese frosting1 package fat free cream cheese3 tablespoons smart balance light1 tsp vanilla1 cup powdered sugarfat free milk to blend (not much- less than a tablespoon)
Preheat oven to 350F
Lightly mist an large casserole pan
Mix the flour, cinnamon, baking soda, salt, and nutmeg in a small mixing bowl.
Use a sturdy whisk to mix egg whites, Splenda, yogurt and applesauce.
Stir in the flour mixture until the batter is well combined with no lumps.
Stir in carrots.
Bake for 30 to 35 minutes. Let cool for 1 hour.
Cream Cheese frosting: Mix all ingredients and use only enough milk to blend creamy.
