sweet potato & pinto bean chili from scratch

2 cups chopped onion2 small bell pepper chopped3 c dried pinto beans1000 grams cubed sweet potato (about 4 lbs before skins removed )28 oz can diced tomato1 tbs chili powder1 tsp cumin1 tsp dried oreganosalt and pepper to taste12 c water
in large pot bring ( rinsed ans sorted) dried pinto beans,12 cups water, onion, bell pepper, and seasonings to boil covered for 3 hours, or until beans are tender, then add sweet potato and tomato and boil uncovered 1 hour or until desired consistency, add water if needed. salt and pepper to taste before serving.
