Schnitzel a la Luuk

2 boneless pork chops, cut in half and pounded flatLittle less than 3/4 cup italian breadcrumbs2 jumbo egss beaten (using effectively 1.5 egg)2 Tbsp salted butter1 Tbsp vegetable oil
Cut the two pork chops in half and pound them flat. Sprinkle salt, pepper and garlic powder on each side.
Dip in beaten eggs and then dip in italian breadcrumbs covering each pork chop completely.
Let rest for about 5 minutes.
Heat 1 Tbsp butter and 1 Tbps of oil in frying pan (med-high). Fry the pork chops on one side until brown. Flip over and add remaining 1 Tbsp of butter. Fry until brown. Flip again and cover with lid. Turn heat to low. Cook for 3 minutes and then flip again for another 3 minutes.
